Thai Noodles
Prep/Cook Time: 20 minutes
Serves: 6-8
1 pound linguine pasta
1 medium red pepper, diced
1 bunch scallions, thinly sliced
1 bottle Spicy Thai Peanut Sauce
toasted sesame seeds, optional
Cook pasta according to package directions, drain.
Mix in Spicy Thai Peanut Sauce to taste, at least half the bottle. Combine with red peppers and scallions and arrange in large serving bowl or pasta bowl.
Top with toasted sesame seeds and serve immediately or chill and serve cold or at room temperature.
Pesto Pizza
Prep/Cook Time: 20 minutes
Serves: 4 (2 slices each)
1 Boboli Pizza Shell (or your favorite pizza dough)
4 oz. Summer Hill Sauces Pesto, any variety
1 large tomato
4 slices bacon
4 oz. mozzarella cheese
Parmesan cheese, to taste
Spread pesto on pizza crust. Arrange tomatoes and bacon on top. Salt tomatoes, if desired.
Sprinkle mozzarella and Parmesan cheeses over pizza.
Bake at 450°F for 8-10 minutes or until cheese is melted.
Creamy Pesto Shrimp
Prep/Cook Time: 30 minutes
Serves: 8
1 pound linguine pasta
1/2 cup butter
2 cups heavy cream
1/2 teaspoon ground black pepper
1 cup grated Parmesan cheese
1/3 cup Summer Hill Sauces pesto
1 pound large shrimp, peeled and deveined
1. Cook pasta according to package directions, drain and keep hot.
2. In a large skillet, melt the butter over medium heat. Stir in cream, and season with pepper. Cook 6 to 8 minutes, stirring constantly.
3. Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed. Blend in the pesto, and cook for 3 to 5 minutes, until thickened.
4. Stir in the shrimp, and cook until they turn pink, about 5 minutes. Serve over linguine.
Beef Stir Fry
Prep/Cook Time: 20 minutes
Serves: 4
8 ounces beef filet, cut into 1/2 inch strips
2 tablespoons vegetable oil
1 bag mixed stir fry vegetables (fresh or frozen)
1/2 cup Spicy Thai Marinade
2 cups prepared rice
In a large skillet over medium high heat, sauté the beef slices in the oil for 5 minutes, or until well browned.
Add the vegetables and cook until hot and crisp, about 5 minutes.
Add Spicy Thai Marinade to taste. Reduce heat to low and let simmer for 5 minutes.
Serve stir fry over hot rice.
